    1 1/2 lbs extra lean ground beef
    1 tbs olive oil
    2 medium onions, chopped
    1 tbs chopped garlic
    10 baby carrots, shredded
    1 cup mixed color pepper strips
    10 oz box frozen spinach, defrosted
    28 oz can petite diced tomatoes
    28 oz can crushed tomatoes
    6 oz can tomato paste
    1 1/2 tsp seasoning salt
    1 tsp black pepper
    2 tbs basil, dried
    1 tbs parsley, dried
    1 tbs marjoram, dried
    1 tbs cilantro, dried
    1/2 tbs oregano, dried


In a large skillet brown the ground meat in the olive oil.
Add the chopped onions, chopped garlic, shredded carrots, pepper strips, and chopped spinach.
Saute until the onions are tender.
Add the tomato paste, crushed tomatoes, diced tomatoes and all the seasonings.
Stir well and bring back to a bubble.
Reduce heat and simmer for about 20 minutes.

Makes 8 generous servings (about 1 1/2 to 2 cups each).
Best served over whole wheat pasta (not included in nutritional info.)
