Introduction

These muffins could have a different fruit substituted easily: cranberries, other types of berries, apples, etc. The spices might just need to be adjusted!

These muffins are hearty and delicious with cream cheese! I feed them to my toddler, because they are a healthy alternative to store-bought muffins or muffin mixes, and he loves them!

Number of Servings: 24

Ingredients

    2 c. whole wheat pastry flour
    1 c. rolled oats
    4 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp cinnamon
    1/4 tsp. nutmeg
    1 c. nonfat milk
    2 beaten eggs
    1/4 c. molasses
    1/4 c. honey
    1/2 c. light olive oil
    1.5 c. chopped peach slices

Directions

1. Combine all dry ingredients together in a large bowl. Mix well.
2. Combine wet ingredients in a separate bowl. Mix well.
3. Pour wet mix into dry ingredients bowl. Mix just until combined (mixture will be lumpy)
4. Line muffin tins with paper liners, and fill each cup up 1/2 - 2/3 full. Muffins will not rise too much.
5. Cook at 400 degrees F. for 18-20 minutes.

Makes 24 muffins.
