    4 boneless skinless drumsticks
    1/2 cup cilantro
    cumin to taste
    Chili-lime seasoning to taste
    6 cloves of garlic, diced and separated
    1/4 cup of chicken stock
    1 can of Black beans
    1/2 cup of red onion
    a splash of cider vinegar
    1 1/2 cups of cheddar cheese
    1 TBS Olive Oil
    6 whole wheat tortillas


Combine cilantro, some of cumin, 1/2 of garlic, chili-lime seasoning, and processes using chicken stock to thin it out a little. Marinate drumsticks in mixture. Then cook through. Shred chicken and set aside. Heat oil and saute garlic and onion until soft. Then add beans, vinegar, and cumin until heated through. Place 2 tortillas on the bottom of an 8x8 dish. Spread 1/2 of the chicken mixture and 1/2 of the bean mixture and 1/3 of the cheese. Then place another 2 tortillas on top and repeat with final 1/2 of chicken and beans. And top with another 1/3 of cheddar. Add the final two tortillas on top and sprinkle remaining 1/3 of cheddar cheese. Bake @ 375 for 30 minutes or until cheese is bubbly and everything is heated through.
