    * Apples, fresh, 18 medium (2-3/4" dia) (approx 3 per l
    * Water, tap, 6 cup (8 fl oz)
    * Granulated Sugar, 8 tsp
    * Cinnamon, ground, .5 tbsp
    * Lowfat Vanilla Ice Cream, 560 grams


1. Combine all ingredients except ice cream. Bring to boil, reduce heat, simmer, covered until apples are soft.

2. Transfer soup in batches to blender and puree until smooth. Strain thorugh a fine sieve. Let cool to room temperature. Cover & refrigerate 4 hours.

3. Serve - stir in the ice cream, dived the soup among chilled bowls, sprinkle with cinnamon, serve immediately.
