Ingredients

    1 lb of extra lean ground beef or turkey
    1 can pinto beans, rinsed and drained
    1 large onion, chopped
    2 cloves garlic, minced
    1 28 oz can of tomatoes (may need more)
    chili powder
    paprika
    oregano
    cayenne
    salt (all to taste)

Directions

Brown ground beef and onions in a large dutch oven, adding the garlic the last few minutes. Add the tomatoes with all the juices, and all the spices as well. I usually use at least a Tbsp each of paprika and chili powder, about a tsp each of cayenne, oregano, and salt - but really these should be to your liking.
I also sometimes use 1.5 jars (28oz each) of tomato instead of just the one. You just have to let it simmer awhile and see what you think. You really can't mess chili up.
When it is done, add the pinto beans and just warm through. Serves 6 big bowls of chili.
