    1 lb. frozen spinach
    1 cup fat free Ricotta Cheese
    2 large eggs
    1 cup + 2 Tbsp. Whole Wheat Flour
    2/3 cup shredded Parmesan Cheese
    Olive Oil or Butter flavored Cooking Spray


Cook spinach to package directions, drain and cool. Squeeze out any liquid. Chop finely.
Mix Spinach with Riccota, 1/3 cup of Parmesan, 2 Tbsp. Flour and eggs. Mix well, cover and refridgerate for 1 hr.
Spray a casserole dish with Olive Oil or cooking spray. Pour remaining flour in a flat bowl. Bring a large pot of water (salted) to a boil.
With a spoon, shape walnut size pieces of dough against your hand and drop them into the flour. Make approx. 1/4 batch, then turn and coat carfully and drop the gnocchi into the slightly boiling water. Cook for approx. 5-7 minutes until firm. Remove with a sloted spoon into a strainer lined with paper towels to drain. Transfer into the prepared baking dish and repeat with remaining dough.
When all gnocchi are in the baking dish, spray with olive oil or cooking spray. Sprinkle with remaining Parmesan and broil until the top is golden brown.
