    1 package turkey breast cutlets
    15 oz fat free ricotta
    2 cup shredded mozzarella
    1/4 c asiago and parmesan cheese blend
    1 jar spaghetti sauce
    1 c frozen spinach, cooked
    1 tsp italian seasoning
    1 egg yolk


mix ricotta, half of the mozzarella, half of the asiago, italian seasoning, egg and spinach and set aside.
one at a time lay turkey cutlets between two pieces of plastic wrap and pound with a mallet until flattened and stretched slightly.
place a mound of cheese in the middle of each cutlet and fold over the edges. place in a baking dish.
top each rolled up piece of turkey with a few tablespoons of tomato sauce and more cheese mixture. cover with the rest of the mozzarella and asiago and parmesan blend.
bake at 350 for about 30 minutes or until temp reaches 160.
serve over whole wheat pasta.
