Ingredients

    1.25 c water
    1 c uncooked white rice
    1 c light coconut milk
    .5 c frozen green peas

Directions

Bring all ingrediant to boil over medium high heat. Stir, cover, and simmer over low heat for 20 minutes. Do not uncover during the 20 minutes! Remove from heat and let stand for 5 minutes. Fluff with fork and serve. Makes 4 1-cup servings.
