Introduction

This is a yummy recipe that I got from Food network...it originally had 1 pound of sliced mushrooms as well, but I don't like mushrooms, so I left them out. I just like the taste and texture of this recipe. Ingredients

    3 cups beef stock
    1 carrot chopped
    2 tsp thyme
    1 bay leaf
    1.5 pound chuck roast cut into 2 inch cubes
    Salt and Pepper to taste
    3 TBSP olive oil
    1 medium onion chopped
    4 cloves of garlic
    2 TBSP sour cream
    1 TBSP Dijon mustard
    1/4 cup chopped parsley
    1 cup cooked couscous

Directions

Heat beef stock with carrot, thyme and bay leaf. Pat the beef dry and season with salt and pepper. Heat oil in large heavy bottomed skillet over high heat. Fry the meat in batches so that it is browned on all sides. Lower the heat to medium and add onions and garlic until they are soft. Add the meat back in. Add the beef stock minus the carrot, thyme and bay leaf. Cook, partially covered over very low heat for 1.5 - 2 hours.

Cook couscous according to package directions. Fluff and add 1 TBSP olive oil and 2 TBSP of the parsley.

When the meat is tender, remove from heat and add the sour cream, mustard and remaining parsley.

Serve beef over the couscous.

Makes 6 generous servings.
