    Cornmeal for sprinkling
    1 tsp olive oil
    1 c chopped fennel
    1 10oz package frozen spinach (thawed)
    salt and pepper to taste
    1 Boboli whole wheat pizza crust
    3/4 c fat free prepared marinara sauce
    1/2 cu reduced fat ricotta
    3 oz (about 3/4 c) feta cheese
    4 plum tomatoes, chopped
    1/2 cup fresh mint


-Preheat oven to 500
-If not using a pizza stone, sprinkle baking sheet with cornmeal.
-Heat oil in a large non-stick skillet over med-high. Add fennel and saute 5 min. Reduce heat to low.
-Squeeze spinach to remove excess water and stir into fennel. Season with salt and pepper
-Spread sauce over crust
-Arrange fennel-spinach mix evenly over red sauce
-Spoon tiny dollups of ricotta over fennel-spinach mix.
-Sprinkle wit feta and bake for 12-15 min
-While pizza cooks, place tomatoes and mint in a bowl and toss to combine.
-Scatter mixture over pizza before cutting into 8 slices and serving.
