    1 TBS coconut oil
    1 TBS minced garlic
    1 medium onion sliced
    1 pepper sliced
    2 portabella mushrooms
    1 tomato
    1 TBS soy sauce
    3 flour tortillas


Over medium heat Saute' onion & garlic in oil for a few minutes
Add sliced pepper, cover with lid and cook for 3 minutes
Add sliced mushrooms cover cook for 3 more minutes
Add soy sauce
Add chopped tomato and cook uncovered for 3 minutes
put into a tortilla and add some mustard if you like
