    2 egg whites
    6 tsp. vanilla extract
    4 cups unblanched almonds
    1/3 cup brown sugar (packed)
    1/3 cup white sugar
    1 tsp. salt
    1/2 tsp. cinnamon


Mix egg whites in bowl until frothy. Add vanilla and mix well. Stir in almonds until covered. Mix together sugars, salt and cinnamon in separate bowl. When well blended, stir into almond mixture, and stir gently until well coated. Spread evenly onto 2 cookie sheets and bake in 300 degree oven for 25-30 minutes, stirring once after about 15 min. Cool completely. Break apart. Store in air-tight container.

Makes about 4 cups almonds... or about 24 servings.
