Introduction

Tender chicken smothered in black beans and diced tomatoes, is slow roasted in lime juice, cilantro, minced garlic, and cumin. These zesty flavors combined make this healthful and hearty dish a perfect dinner with family. Serve with a fresh green salad and whole-grain rice! Ingredients

    (2) Boneless Skinless Chicken Breasts
    1 can of black beans (drained and rinsed)
    1 can of Rotel diced tomatoes with lime juice and cilantro
    1/4 cup of diced onion
    1/2 tsp of ground cumin
    1/2 tsp of garlic powder
    2 tsp of minced garlic ( garlic powder works fine as well)
    1/2 packet of McCormick Taco Seasoning
    2 tbsp of chicken broth
    2 tbsp of cheddar cheese
    *Optional- Add a tsp of light sour cream to each chicken breast with a sprig of cilantro for added flavor and visual interest!

    ADDTIONAL IDEA: This dish would also make a great base to a soup. Simply boil chicken breasts in water and cut into cube size pieces and add more chicken stock and seasoning.

Directions

Preheat oven to 350 degrees.

1. Place 2 chicken breasts in an oven-safe dish and sprinkle onion salt, garlic powder over each breast.

2. In a small bowl, mix 1 can of black beans, 1 can of diced tomatoes and garlic. Pour over chicken.

3. Surround chicken with a 3/4 cup of chicken broth.

4. Cover with foil and bake at 350 degrees 45-60 minutes.

-->NOTE: The cooking process always depends on the thickness of your chicken. This recipe is based on 1/2 inch thickness.

5. The last 10 minutes of baking, remove the foil and sprinkle with 1 tbsp of cheddar cheese, return to the oven and bake until chicken is no longer pink and juices run clear.

Serve with whole-grain rice or a nice green salad.
