Easy, fast, frugal recipe. Can be modified with lots of spices, peppers, etc to taste, this is a basic, tasty recipe to start with that's fast and easy. Easy, fast, frugal recipe. Number of Servings: 4

Ingredients

    1-2 cups Cooked white rice
    1 Can of black beans
    0.5 cup Salsa (any hotness desired)
    0.5 cup Roasted red peppers
    dash cumin
    onions, to taste

Directions

Drain half of liquid off black beans, put into pot.
Add salsa
Add roasted red peppers
Cook over medium heat until boiling, then reduce heat
Add cumin and onions (add jalapenos or other hot peppers if desired)
Stir thoroughly, cook until fully heated through
Serve with 2 tbsp fat free sour cream as garnish, if desired.
Each serving is approximately 1 cup.
