A chickpea and tahini dip. A chickpea and tahini dip.
Number of Servings: 20


    3 cups canned chickpeas
    1/2 cup olive oil
    1/2 tablespoon salt
    4 cloves of garlic
    1/4 cup sesame tahini
    1/4 cup lemon juice


Drain chickpeas, and keep 1 cup of the chickpea canning water.

In a food processer, blend chickpeas, olive oil, and the canning water.

In a mortar, pound the salt and garlic cloves until creamy.

In a separate bowl, beat the tahini and lemon juice until smooth and well mixed.

Combine the garlic paste mixture with the tahini mixture, and mix until well combined.

Combine the tahini/garlic mixture with the chickpea mixture, and combine well.

Makes about 20 servings of 2.5 tablespoons each.
