    Portabella Mushrooms, 2 cups
    Shiitake Mushrooms, 2 cups
    Bread crumbs, dry, grated, seasoned, 2 cups
    Parmesan Cheese, grated, 4 tbsp
    Smart Balance Buttery Spread, 8 tbsp


Preheat oven to 400 degrees F.

Wipe mushrooms with a damp cloth. Break off mushroom stems and set aside. Place caps in baking dish or on a cookie sheet in one layer if there's enough room. If there's not enough room, double up but try to keep them spread out.

Place bread crumbs inside a zippered bag. Rough chop the mushroom stems and add them to the bag. Add grated parmesan to the bag. Shake it up!

Pour the bread crumb mixture over the mushroom caps. Cut up margarine into small (maybe 1 teaspoon)-sized pieces and distribute over the mushrooms and bread crumb mixture.

Bake in a 400 degree oven for 20 minutes or until golden. Mushrooms should smell amazing. Make sure to save the juice!

Can be reheated in the microwave. Can also be eaten as a side dish rather than a main course. Serving size is about 3/4 cup.

White mushrooms can be substituted if you can't find the fancy stuff.
