    2 cups brown rice, boiled
    3 eggs
    1/4 cup milk (low/no fat or full fat)
    1/5 cup fresh chives, snipped
    1/4 red capsicum / pepper, chopped
    2 medium carrots, chopped
    100g celery, chopped
    3/4 cup canned corn
    1 1/2 tbsp sesame seeds
    1 tbsp sesame oil
    2 tbsp sweet chilli sauce
    2 1/2 tbsp soy sauce


1. Pre cook the brown rice, drain and rinse in warm water
2. Whisk the eggs with the milk, and cook the mixture in a saucepan with the lid on over low - medium heat (effectively steaming it). Once the eggs are cooked, transfer to a NOT oiled pan to brown each side. Remove from heat, cool, and slice into cubes (will be about 1cm cubed).
3. In a hot wok or electric frying pan, add sesame oil, the carrots and capsicum. Fry for approx 3 minutes or until slightly browned (stirring frequently).
4. Add celery, corn and sesame seeds and soy sauce. Stir fry for a few minutes.
5. Add rice and stir through. Stir fry for another few minutes.
6. Add sweet chilli sauce and eggs and stir fry for approx 1-2 minutes.
