Ingredients

2 cups nopales, jar
1 med. onion, chopped
2 med. tomatoes, seeded and chopped
1 lg. potato, cubed
4 oz pickled jalapenos
1 grn. pepper, seeded and chopped
S & P to taste
1-3 tsp. cumin
1-3 tsp. chili powder
1-3 tsp. garlic powder
1 c. grated cheddar cheese
1 can refried bean
1 c. sour cream
6 12" flour tortillas
Directions
Cook nopales, onion, potato and grn. pepper in sprayed skillet about 5-10 minutes. Add spices, S & P, tomatoes and jalapenos. Meanwhile, heat refried beans either on stove or in microwave. Then heat flour tortillas over open flame to lightly brown. For each tortilla, spread a spoonful of beans, a pinch of cheese and a heap of the nopal mixture. Top with sour cream, salsa, whatever.
