    4 cup, cubes Sweet potato
    4 leek Leeks
    4 oz Heavy Whipping Cream
    9 oz *Athenos Reduced Fat Feta Cheese
    8 Egg, fresh


Preheat oven 350 F.
Spray muffin tins with zero calorie spray.
Boil, steam or microwave sweet potatoes, set aside.
Saute leek for 10 min in zero calorie spray, add garlic cook 1 min more. Cool slightly, Stir in feta and sweet potato.
Divide into muffin tins.
Whisk egg and cream together, season with salt and pepper. Pour into muffin pans 3/4 full.
Bake 25-30 min or till golden brown and set. let stand for 5 min. Ease out with a knife. Serve hot or room temp.
