Ingredients

    3 boneless skinless chicken breasts
    3 tbsp of lime juice
    1 tbsp chili powder
    1 cup of salsa
    .5 cup of frozen yellow corn
    soft taco shells
    Lettuce, tomatoes to taste
    reduced fat sour cream

Directions

Trim chicken breast of excess fat and place in bottom of standard sized slow cooker. In a small bowl, mix 3 tbsp lime juice and 1 tbsp. chili powder and pour over chicken breasts. Cook on low setting for 4-5 hours or until meat is cooked thoroughly. Remove chicken from slow cooker and shred. Put shredded chicken back into cooker and add salsa and frozen corn. Mix thoroughly and let cook for another half an hour or until heated through. Serve on soft taco shells with lettuce, tomatoes and other toppings. Makes 6 soft chicken tacos.

    I am so glad I found this recipe again! I made it a few months ago, and the whole family LOVED it! Unfortunately, I didn't print the recipe out or save it. So, when I went to make it again, I couldn't remember where I found it or what it was called. Save this one -- it's a keeper!! - 7/21/09

    I got thumbs up all around with this recipe! I used more chicken so I would have leftovers to use on salads. I cooked the chicken as directed, but also added chicken broth because I knew I was going to be at work for more than 5 hours and did not want the chicken drying out. Delicious!!! - 4/22/10
