Ingredients

    * Olive Oil, 2 tbsp (remove)
    * Onions, raw, 1 cup, chopped (remove)
    * Garlic, 3 clove (remove)
    * Ginger Root, 4 tsp (remove)
    * Pepper, red or cayenne, .25 tsp (remove)
    * Cinnamon, ground, .25 tsp (remove)
    * Cardamom, ground, .25 tsp (remove)
    * *Coriander seed, .5 tsp (remove)
    * Salt, 1 tsp (remove)
    * Water, tap, 1 cup (8 fl oz) (remove)
    * *Lemon Juice, .0416 cup (remove)
    * Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt, 3 Cup (remove)
    * Red Ripe Tomatoes, .5 cup, chopped or sliced (remove)
    * Spinach, fresh, 2 cup (remove)

Directions

heat oil in skillet, add onions & garlic and saute over medium till onions are soft and begin to brown. Add spices and mix well. stir in water, lemon juice, black eyed peas, cover and simmer about 10 minutes. Add spinach and tomatoes and cook will the spinach wilts.

Serve immediately over rice or quinoa, with chutney, and yogurt or raita.
