Introduction

A Wonderful, healthy alternative to traditional Banana Bread. Can be made virtually fat free by omitting the nuts. A Wonderful, healthy alternative to traditional Banana Bread. Can be made virtually fat free by omitting the nuts.
Number of Servings: 16

Ingredients

    4 very ripe Bananas
    1/2 cup Applesauce, unsweetened
    3/4 cup Raw, Granulated Sugar
    1 tsp Vanilla Extract
    2 large Eggs
    1 tsp Baking Soda
    1 tablespon Baking Powder
    1 tsp Salt
    2 cups All-purpose flour, white or wheat
    3/4 cup Black Walnuts

Directions

Preheat oven to 350 F.

Place bananas in a large bowl and mash with electric mixer.

Stir in sugar and let stand for 10 minutes.

Add applesauce and eggs and beat well.

Add remaining ingredients and mix thoroughly.

Pour into 9x5 inch loaf pan coated with nonstick vegetable spray.

Bake for 45 minutes, or until a wooden toothpick inserted in the center of the loaf comes out clean.

Remove from oven and let stand 10 minutes before removing from pan.

Cool on wire rack.

Even better after sitting for a day!
