Introduction

Ingredients

    **1.5 pounds chicken, cut into 1 inch pieces
    **3/4 cup balsamic vinegar
    **1/2 cup extra virgin olive oil
    **2 teaspoons brown sugar, unpacked
    **1/4 cup chopped onion
    **pepper as desired

Directions

**Nutritional information is based on a 2 ounce serving size because I typically use this on a salad. Will make 12 2-ounce servings**

Mix together all ingredients except chicken with a wire whisk. Whisk until brown sugar is fairly well dissolved. Put chicken pieces into a gallon size ziploc bag and pour marinade over them. Seal bag, place in refrigerator, and allow chicken to marinate for at least 8 hours and no longer than 24 hours. Remove chicken pieces and discard remaining marinade. Cook chicken as desired; I usually just toss it into a skillet over medium heat until it is cooked through.
