Introduction

Bold and intense, this is a pretty easy ice cream to make. No ice cream maker needed! Bold and intense, this is a pretty easy ice cream to make. No ice cream maker needed!
Number of Servings: 8

Ingredients

    2/3 cup sugar
    1/4 tsp salt
    2 cups whole milk
    1 cup heavy cream

Directions

Mix the milk and cream. Set aside

Caramelize sugar with salt in medium saucepan over medium low heat.

Add 1/2 of the milk and cream mixture. Simmer over low heat stirring often for about 10 to 12 minutes.

Add the rest of the cream mixture.

Chill in the fridge for a bit. Or, pour mixture in a metal bowl and stick it in the freezer. Every 20 minutes, stir vigorously with a fork, whip or hand held mixer.

This should have the consistency of soft serve.

Makes about 8 servings. It is insanely intense and bold so you don't need a huge serving to be satisfied. About 200 cal/serving,

    To caramelize the sugar, just add it to the pan with the salt. No water is needed. Heat the pan over medium heat. Watch and stir. The sugar will liquefy and as it continues to cook will start to brown. Here's the original recipe I used with pics:

    Sugar, whole milk, heavy cream, salt? I also saw a recipe for peanut butter chocolate cupcakes w/almost 300 cals, 11 fat grams and 44.5 grams of sugar EACH. I'm now using Sparkpeople again. They used to have healthy recipes. I can find unhealthy recipes anywhere else on the web. What happened? - 2/5/15

    While I agree on the high calories and fat content of this recipe, I think it is a great recipe for making an occasional treat without an ice cream maker. Only one thing I have a question on is how long before it sets up in the freezer? You say to stir every 20 minutes but not for how long? - 9/28/15

    This might be good once in a blue moon -- when my friends go on diets they start making "special" foods so they don't feel deprived.
