Introduction

Number of Servings: 4

Ingredients

    2 cups cauliflower florets, steamed until tender
    3 tbsp brown rice or oat flour
    1 egg, lightly beaten
    1/4 cup minced onion
    2 tbsp olive oil, to cook
    salt and pepper to taste

Directions

Steam cauliflower until it is easily mashed with a fork. Move to medium mixing bowl and mash with potato masher until fairly mashed but not completely mushy.
Add in flour, egg, onion, and salt and pepper and mix well.

Heat olive oil in skillet over medium heat. Drop cauliflower mixture into 3 to 4" 'pancakes' in oil. Cook until lightly browned on both sides, flipping carefully! If it falls apart when you flip it, don't worry - it will still taste great!
