LOVE this! It freezes well--if it lasts that long! It's great for parties. Makes about 10 servings 3/4-1 cup each. Unfortunately, TJ's doesn't offer Spanish Rice anymore, so you'll just have to use Basmati and spice to taste. LOVE this! It freezes well--if it lasts that long! It's great for parties. Number of Servings: 10

Ingredients

    1 container free range chicken broth
    1 can Trader Joe’s Premium Chunk Chicken
    2 cups Basmati Rice (uncooked)
    2 cans Trader Joe’s Chicken Chili
    1 ½ teaspoon chili powder
    Other spices to taste (onion, green pepper, garlic, etc.)

Directions

BRING TO A BOIL:
3 cups water
chicken broth
ADD: Rice and spices, stir
ADD: Chicken, chicken chili, and chili powder
BRING TO A BOIL, simmer for 15 minutes.
SPRINKLE with optional toppings: cheese, sour cream, and/or chopped onion (NOT included in the nutritional information)

Makes about 10 servings.
