    12 oz mahi mahi1 tbsp olive oil2 tbsp butter2 cups of button mushrooms, sliced1 cup of sliced red peppers2 cups fresh spinach1 cup chopped carrots4 cup bowtie pasta1/2 cup parmesan cheeseLemon pepper, and italian seasoning for flavoring.


Heat oil and butter in a large deep skillet. In a cooking pot, boil 1 box of bowtie pasta.

When butter is melted add in all vegetables, and saute for 5 minutes. Add 1/2 cup of water, set heat to low and cover. Let steam cook for about 10 minutes. After pasta is cooked, add to skillet. toss and cook another 5 minutes. Add lemon pepper, italian seasoning, and parmesan. Mix well and serve immediately.
