    Flour, white, 2.5 cup
    Baking Powder, 2 tsp
    Baking Soda, 1 tsp
    Allspice, .5 tsp
    Granulated Sugar, 1 cup
    egg white, fresh, 3 large
    Applesauce, unsweetened, .5 cup
    Olive Oil, 2 tbsp
    Vanilla extract, imitation, alcohol, 1 tsp
    Banana, fresh, 2 cup, mashed


Set a rack at the middle level of the oven and preheat to 375 degrees.
In a mixing bowl, combine the flour, baking powder and soda, and allspice and stir well to mix.
In a separate bowl, whick together the sugar, egg whites, applesauce, oil, vanilla, and bananas.
Being careful not to overmix, fold in the flour mixtures.
Scrape the batter into the prepared pan. Bake the loaf for 45-50 minutes, until it is well risen and a skewer or thin knife inserted in the thickest part of the bread emerges clean.
Cool on a rack for 5 minutes, then unmold and finish cooling.
