Great as filling for a wrap or as a side dish! Great as filling for a wrap or as a side dish!

    Chinese eggplant.


Slice eggplant in 1 inch circles (chinese eggplant works great for this). Chop onion. Add it all to a non-stick pan. Cook on low to medium heat, stirring to prevent burning. Eggplant should be soft & browned on at least one side. No oil is needed but can be added if you don't mind the extra fat!
