Ingredients

1 medium onion, chopped
4 ounces Country Ham, chopped
2 stalks celery, chopped
1 teaspoon garlic, minced
11 ounces black eyed peas, cooked
1 ½ cups green beans, cut into 1/2" pieces
½ teaspoon Cajun Seasoning
3 cups vegetable stock
2 Tablespoons olive oil
Directions
Heat the olive oil in a heavy saucepan over medium heat. Add the onions and cook until transparent. Add ham, garlic, and celery. Cook until celery is softened. Add Cajun seasoning and vegetable stock. Increase heat to high and bring to boil. Add black eyed peas and green beans. Return to boil. Reduce heat and simmer for 15 minutes. Serve over grits or rice
