What a great way to sneak some veggies into a family favorite! What a great way to sneak some veggies into a family favorite!
Number of Servings: 8


    1/2 cup seasoned bread crumbs
    1 small zucchini, grated (1 cup)
    1 egg white
    1/4 cup grated Parmesan cheese
    1 clove garlic, minced
    1 tsp salt
    1/4 tsp black pepper
    1 lb. extra lean ground beef (96% lean)


Combine all ingredients until well blended. Shape into 1 inch balls and place on baking sheet. Bake at 425 degrees for 15 to 20 minutes, or until cooked through.
