    3 pounds boneless skinless chicken breast
    1/4 C + 2 Tbsp extra virgin olive oil
    1 medium yellow onion, chopped
    1 large red bell pepper, chopped
    1 C white mushrooms, halved or sliced
    1 28-oz can whole peeled tomatoes with juice
    1 12-oz can tomato paste
    1/2 C regular chicken stock
    1/2 red cooking wine
    3 cloves garlic, minced
    1 bay leaf (WHOLE, not crumbled!)
    2 Tbsp minced FRESH oregano
    2 Tbsp minced FRESH parsley
    1 Tbsp minced FRESH basil
    1 tsp salt
    1/2 tsp black pepper


1. In a large nonstick saucepan over medium-high heat, brown the chicken in 2 Tbsp of the oil. Do not cook through, simply brown both sides of each breast.

2. In a large slow cooker, combine the remaining ingredients.

3. Add the chicken to the slow cooker.

4. Cook on high heat for 4 hours or low heat for 8 hours.
