    1lb ground turkey, 93% Lean
    15 oz. can black beans, drained & rinsed
    2/3 C frozen corn
    10oz. Old El Paso enchilada sauce
    1C light spaghetti sauce
    1C Thick & Chunky Salsa
    6 whole corn tortillas
    6 corn tortillas, cut in halves
    9 oz. 2% velveeta
    3 scallions, chopped


Brown turkey. Add black beans, corn, enchilada sauce, spaghetti sauce, and salsa. Spray a 9x13 pan with cooking spray. Coat the bottom of the pan with 1C of the meat filling. Place 3 whole tortillas down the middle evenly. Place 6 of the halves on along the sides to cover making an even layer of tortilla. Place half of the remaining meat mixture over the tortillas. Then layer 4oz of the velveeta. Repeat layer starting with tortillas, then the rest of the meat mixture, then cheese. Top with scallions and bake at 350 for 20 minutes.
