Introduction

Chilled slighly tart winter salad that can be made in advance. Chilled slighly tart winter salad that can be made in advance.
Number of Servings: 10

Ingredients

    2 cups cubed yams
    4 cups whole fresh cranberries
    3 cups apple juice
    2 cups chopped apples

Directions

Combine yams, cranberries in a medium sauce pan with apple juice. Simmer 5 minutes then add apples. Continue to simmer until yams are just tender not mushy and cranberries are starting to split. Using a slotted spoon remove yams, cranberries and apples. Contnue to simmer apple juice until it is reduced to 1-2 cups. Combine juice and chopped food again and chill. Makes 10-12 servings
