    1 C jasmine rice
    2 t sugar
    1/2 t salt

    1/3 C peanut butter
    1/4 C tofu
    1 T soy sauce
    2 T rice vinegar
    2 t lime juice
    1 t sesame oil
    1 clove minced garlic
    1/8 t red pepper

    4 scallions
    1/2 C cilantro

Directions

cook first 4 ingredients as usual

combine next 8 ingredients in bowl and pour over cooked rice

stir in last 2 ingredients
