Introduction

This has been a family favorite for years. We always have it with baked ham. This has been a family favorite for years. We always have it with baked ham.
Number of Servings: 6

Ingredients

    1 can cream of mushroom soup (condensed)
    3/4 cup nonfat milk
    1 small onion diced
    1 cup shredded cheddar cheese
    1/8 tsp pepper
    1/4 tsp salt
    5 cups sliced potatoes

Directions

In a casserole dish empty can of soup. Slowly mix in milk and stir or whisk until smooth. Stir in onion, cheese, salt and pepper. Add potatoes and stir to cover with soup mixture.

Microwave on high for 15 minutes. Stir to coat potatoes on top. Microwave for another 15 minutes. Remove and check tenderness of potatoes. I may need to go back in microwave for another 10 minutes.

Makes 6 hearty servings.
