    1 tsp olive oil
    1 medium onion, chopped
    2 tbs lemon juice
    2 tbs honey
    2 tbs soy sauce
    1 (14 oz) can low sodium chicken broth
    1 cup rice
    1/2 tsp black pepper
    1 tbs parsley, dried


In a large skillet with a tight fitting lid, heat the olive oil.
Add the chopped onions and saute until soft.
Add the lemon juice, honey, soy sauce, chicken broth, rice, black pepper, and parsley.
Stir well.
Cover and simmer for about 30 minutes or until the liquid is absorbed.
