Ingredients

    4 Cups 99% Free Chicken Broth
    4 cups Great Northern Beans
    3 - 4 Cups Water
    3 Cups Fresh Torn Spinach Leaves
    2 cups Diced Canned Tomatoes in Juice
    1/2 Cup Diced Fresh Red or Yellow Pepper
    1/4 cup Chopped Fresh Parsley
    3 TBSP Chopped Fresh Basil
    1 TBSP Chopped Fresh Rosemary
    5 TBSP Chopped Shallots or Onions
    4 TBSP Red Wine Vinegar

Directions

Saute shallots (or onions) and garlic in olive oil until tender. Add Red pepper and saute 3 more minutes. Add all ingredients except spinach to crock pot and cook on high setting for 3 hours. Add fresh spinach just before serving.
