Excellent waffles, fun to top with some sugar free Cool Whip. Excellent waffles, fun to top with some sugar free Cool Whip.
Number of Servings: 14


    1 1/2 cups whole wheat flour
    5 tablespoons Splenda
    1/2 cup cocoa powder
    3 whole eggs, beaten
    2 ounces margarine, melted and slightly cooled
    2 tablespoons lemon juice
    1 tablspoon pure vanilla extract
    2 cups skim milk, room temperature
    4 ounces chocolate chips, approximately 3/4 cup
    Butter spray, for waffle iron


Preheat waffle iron according to manufacturer's directions.

In a medium bowl whisk together the flour, Splenda, and cocoa powder, In another bowl beat together the eggs and melted margarine, lemon juice, and vanilla, and then add the milk. Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.

Ladle the recommended amount of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
Makes 14 waffle squares from 1/3 C. mix per square

  • made this a.m. for breakfast with our grannykids, used vanilla almond milk and real butter and also halved the choc chips with peanutbutter chips. they were quite a bit thinner than regular waffles but were soooo good! we put fat free choc. and fat free caramel syrup and fat free whipped topping - 5/14/11
