Ingredients

-2 cups Aunt Jemima Whole Wheat Blend Pancake Mix
-1/2 tsp. ground cinnamon
-2/3 cup 2% milk
-1/3 cup honey
-1 large egg slightly beaten
-1/4 cup olive oil
-1 tsp. vanilla extract
-1/2 cup banana, mashed
Directions
1. Preheat oven to 425 degrees
2. Spray 12 medium muffin cups with nonfat cooking spray or line them with paper baking cups.
3. Combine pancake mix and cinnamon in medium bowl.
4. combine honey, egg, oil, banana and vanilla extract in in small bowl with wire whisk; add to dry mix. Mix just until dry ingredients are moistened.
5. Fill muffin cups 3/4 full. Bake 15-18 minutes or until toothpick inserted in center comes out clean.
6.Cool 2 minutes in pan. Remove to cooling rack.
7. Serve with your choice of syrup.
