Introduction

I needed to use up leftover mashed potatoes and I decided to make a very simplistic potato pancake. This can be modified in so many ways! I needed to use up leftover mashed potatoes and I decided to make a very simplistic potato pancake. This can be modified in so many ways!
Number of Servings: 8

Ingredients

    3 cups mashed potatoes
    1 egg
    2 egg whites
    1 tbsp parmesan cheese

Directions

Combine all ingredients and mix well. Spoon a portion of the mixture into the pan. Depending on the size of your pan, you should be able to get up to 4 pancakes in your pan. They will be very loose. Cook on one side for about 4 minutes. Flip and cook another 4 minutes.

This makes 8 large pancakes.
