Introduction

A healthier version of the great greek dish Moussaka but we make it with Ground Chicken breast instead of Lamb and grill our eggplant instead of frying. Ingredients

    2 Eggplants
    1 Tbs olive oil
    1 onion chopped
    2 cloves garlic
    1 lb ground chicken breast
    2 cans diced tomatoes
    1 6oz can tomato paste
    1/2 cup red wine
    1/2 tbs butter
    2-3 tbs wondra flour
    1 cup non fat milk
    1/2 cup feta cheese
    2 tbs grated parmasan cheese
    dash of allspice
    2 tbs cinnamon
    2 tbs Oregano
    1 tbs dried Parsley

Directions

heat pan with olive oil
saute onion and garlic
cook ground chicken and put in cinnamon & oregano
put in diced tomatoes, paste and wine
sprinkle parsley and let simmer

peel and slice eggplant and grill withour oil

next in baking dish layer eggplant and meat sauce 2 -3 times finishing with the meat sauce

Next make white sauce by cleaning pan and heating butter and flour stirring for a minute or two next slowly pour non fat milk in stirring constantly let thicken a bit next add feta and Parmasan cheese stirring last add beaten egg and dash of allspice and pour over the top

Bake in preheated oven of 370 for roughly 40 min or until top is set and browned.
