Introduction

Ingredients

    .5 chicken breast, cooked
    1 Avocado, cubed
    1 Bell pepper, chopped
    1 Jalapeno pepper, minced
    1 C. Alfalfa sprouts
    1 can black beans, drained
    .5 C frozen corn kernels, drained
    Juice of 1 lemon
    1 tbsp olive oil
    Bunch of cilantro
    Salt and Pepper to taste

Directions

Slice and chop the chicken breast, place in large bowl. Add Avocado, bell pepper, jalapeno, alfalfa sprouts, black beans, and corn.

In a small bowl, mix the juice of 1 lemon, with olive oil, and well chopped cilantro. You may add salt and pepper to taste. Pour over salad.

Toss salad well. Sometimes I add a clove of garlic to my serving to assist in keeping up a healthy immune system, and for the flavor.
