Ingredients

1 pound beef, boneless tip or round (cut into 1 inch cubes)
3 cups hot water
1/8 tsp black pepper
1 cup chopped carrots (1/2 inch pieces)
1 1/4 cups potatoes (about 1 inch cubes)
1 cup green pepper (1 inch pieces)
1/2 cup celery (1/2 inch pieces)
1/4 cup onion chopped
1 beef bouillon cube (low sodium)
1 bay leaf
1/2 cup cold water
2 tbsp flour
Directions
Spray a dutch oven or pot like that with cooking spray and brown the beef, about 15 minutes. Add the 3 cups hot water and the pepper, bring to a boil then cover and simmer for about an hour.
Add all the rest of the ingredients except the cold water and flour and simmer for 30 minutes. Take out the bay leaf after cooking.
Mix the cold water and flour and stir in gradually, stir constantly, boil about 1 minute to thicken.
Makes approximately 5- 1 cup servings
