Introduction

These pancakes are incredible...it's hard to believe they are good for you. My kids even like them. For variety, sometimes I sprinkle them with pecans or walnuts, or blueberries before I flip them. As an alternative to maple syrup, I put Smucker's sugar free jam in the microwave to melt it a bit and then pour a few tablespoons over my pancakes...yummo! Ingredients

    1/2 cup all-purpose flour
    1/2 cup whole wheat flour
    1/2 cup quick cooking oats
    3 tsp. brown sugar
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup skim milk
    1/4 cup yogurt with fruit, low fat
    1 large egg

Directions

Mix all dry ingredients together in a mixing bowl. Mix your wet ingredients together in another bowl, then add to the dry ingredients. Mix well. Spray griddle with cooking spray and heat. Drop by 1/4 cupfuls onto hot griddle. I use a cookie scoop. Cook about 3 minutes and then flip. If you like, sprinkle nuts or berries on the pancakes before flipping. Serve with hot maple syrup, yogurt or jam.
