    5 cups water
    8 oz. boneless skinless chicken breasts
    2 jalepeno peppers, chopped (remove seeds for less heat)
    1 1/2 Tbs garlic salt (or to taste)
    1 tsp cumin
    6 scallions, chopped
    1 ear of fresh corn on the cob, cut off the cob
    4 plum or italian tomatoes, chopped
    2 TBS lime juice
    1 avacado, chopped
    1/3 cup chopped cilantro (or to taste)
    4 oz. Tostitos Light


*place water, chicken, garlic salt, cumin, jalapeno, and 3 chopped scallions in a medium pot. simmer and cook till chicken is tender and cooked throughout.
*Remove chicken and shred. Return to pot.
*Add corn, tomatoes, avacado, lime and cilantro. Cook till heated.
*Ladle 1 cup of soup into bowl. Top with 1/2 oz. Tostitos Light. Makes 8-1 cup servings.
