Number of Servings: 6


    2 lbs Potatoes (I use red since that was what my grandma used when cooking from the garden)
    2 large stalks of celery (you may use an entire head if you like)
    1/2 lb. onion (I prefer sweet, but yellow work fine)
    1/4 cup margarine
    1/4 cup flour
    2 Cans or approximately 3.5 cups Low Sodium Chicken Broth
    2 Cups NonFat Milk
    Salt and Pepper to Taste

    **Could add carrots as well.


Dice potatoes and thinly slice celery and onions.
Melt margarine in pan.
Saute onions and celery slowly.
Add 1/4 of the potatoes. Cover and cook on low for about 15 minutes, stirring occasionally.
Stir flour into vegetables.

Put milk and broth in large pot. Add vegetables and remaining potatoes. Add about 1 tsp salt and 1/2 tsp pepper. Bring to a boil.
Cover and simmer for 15 minutes.
Taste test.
Cover and cool.

Reheat before serving.
This soup is great the next day and for left overs.
