    4 slices turkey bacon
    1.5 C. frozen pearl onions
    1 C. sliced button mushrooms
    1 clove garlic, minced
    1 t. dried thyme
    1/4 t. pepper
    6 bonless skinless chicken breasts
    1/2 C. dry red wine
    3/4 C. fat free chicken broth
    1/4 C. tomato paste
    3 T. flour


Makes 6 servings

Cook bacon until crisp. Drain, crumble, and set aside. Layer in order: onion, bacon, mushroom, thyme, pepper, chicken, wine, and broth. Cook 5-6 hours on low. Remove chicken and vegetables. Ladle 1/2 C. liquid into a bowl and turn slow cooker to high. Add tomato paste and flour to liquid in bowl, mixing until well combined. Add liquid, chicken, and veggies back to slow cooker and simmer 15 minutes until sauce is thickened.

As always with a slow cooker recipe, feel free to brown the chicken breasts ahead of time in a little Pam, just to give the dish some color.
