    1 eggplant chopped( do not peel )
    I can plum tomatos with juice
    2 zucchinis
    1 red pepper
    1 green pepper
    1 onion
    2 garlic cloves
    oregano to taste
    thyme to taste
    ( or I use Italian seasoning )
    salt to taste


saute onions and garlic in olive oil
Chop all vegetables.
Add chopped/cubed eggplant. Saute and coat. Add zucchini. Add peppers and canned tomatos, with juice.
Simmer until vegetables are cooked. Place servings into oven proof dishes and sprinkle croutons on top and then cheese. Broil until cheese is melted.
