Number of Servings: 4


    1 tbs sesame oil
    1 tbs cornstarch
    2 tbs cold water
    2 tbs soy sauce
    2 c chicken broth
    1/2 c cashews
    3 stalks celery, diced
    3 carrots, diced
    1/3 onion, diced
    2 chicken breasts, cooked & diced
    salt and pepper
    2 c cooked Minute Rice


In a wok or tall skillet heat oil and briefly saute the vegetables. Add the soy sauce and chicken broth and let simmer for about 5 minutes. Mix the cornstarch with cold water and add to the wok. Allow to thicken. Add the cooked chicken and cashews. Serve hot over the cooked rice.
